Carol grew up
hearing “Breakfast is the most important meal of the day!” Breakfast
is important to her and she wants you to savor it! She has a cookbook that you may purchase if you want some of her recipes. |

Bread is our
specialty at Hillcrest Hide-Away. Your day begins with freshly baked
bread delivered in a basket to your door while it is still warm.
Pre-breakfast beverages (coffee, etc.) are available at this time as
well. |

Breakfast is a
delicious meal with fruit, quick breads (often muffins warm from the
oven), and a main entrée. Entrées may include a baked peach pancake,
Brunch Enchiladas, or one of Carol’s many other favorite recipes.

Carol is happy to
accommodate your special dietary needs. Just let her know when making
your reservation. For those who prefer a lighter breakfast, cereal and
granola is always available. A continental breakfast can be
brought to your room for an additional $10 fee when requested the night
before it is desired. |
From Carol's Kitchen
Raspberry Bon Bon
Muffins
1 cups chocolate chips
¼ cup firmly packed brown sugar
¼ cup granulated sugar
2 teaspoons baking powder
½ teaspoon baking soda
1 cup pecans,
1 cup frozen or fresh raspberries
½ teaspoon salt
¾ cup milk
⅓
cup vegetable oil
2 cups flour
1 egg

In large bowl, combine flour, chips, both sugars, baking powder, baking
soda, and salt. Stir in nuts or cherries.
In small bowl combine milk,
oil and egg until well blended. Add liquid ingredients to dry
ingredients. Stir just until moistened. Spoon batter into 12 greased
muffin cups.
Bake in preheated 375˚ oven for about 18 – 20
minutes or until golden. |
